🟢Almost everything good about a raspberry is locked away where your body can't reach it. Seventy five percent of a raspberry's antioxidant power comes from compounds called anthocyanins and ellagitannins. But they're trapped inside the plant's cell structure. Eating them fresh, your body barely absorbs any of it. Fermentation breaks that structure down. The compounds get converted into forms your gut can actually use — the same process that gives fermented foods their anti-inflammatory and gut healing reputation. A few days later... this is what comes out. How I made these: Raspberries in a bowl. Sprinkle salt over them, about 1 to 1.5% of the weight of the berries. Toss gently, don't crush. Pack them into a jar without pressing down — they release their own juice. Close the lid loosely. 48 to 72 hours at room temperature until tart, jammy, and slightly fizzy. Spoon over yogurt, stir into oatmeal, or eat straight from the jar.
